CAULIFLOWER RICE "OATMEAL"

This is my favorite breakfast and probably the only "recipe" I've created on my own.  It's warm, filling, and I think it's delicious!  This picture below is me enjoying this from one of our favorite condos in Destin with an awesome view.

Ingredients:

​

  • 12 - 14 oz cauliflower rice (organic or non is fine).  This is my post workout breakfast, so I like a heaping bowl and do 14.5 oz.

  • 2 scoops collagen powder

  • 1 tsp of cinnamon  - or more, I never measure

  • 1/2 tsp apple pie spice - or more, again, I never measure

  • 1 tbsp flaxseed meal

  • 1 tbsp cacao powder

  • 1/2 - 1 frozen banana

  • 4 or 5 frozen strawberries

  • Few frozen blueberries

  • 2 tbsps Coconut Flour

  • 1 tbsp prouted pumpkin seed butter

  • coconut butter to drizzle

Directions:

  1. Place frozen cauliflower rice into a sauce pan, add 1/2 cup of water, cover with a lid, and heat on stove on medium heat for roughly 19 minutes.

  2. While cauliflower is steaming, get all other ingredients out and place frozen fruit on a plate.  Slice the banana into slices or chunks (I prefer chunks) and slice strawberries once thawed a little.

  3. Once caulifower is cooked, remove the lid and add 2 scoops of collagen powder one at a time.  Stir in so it doesn't clump. 

  4. Add in cinnamon and apple spice spice, stir to combine.

  5. Add in frozen fruit.

  6. Add flaxseeds and cacao powder and stir to combine.

  7. Remove pan from the burner and add in coconut flour.  The coconut flour thickens everything, so use as much or as little as you prefer.

  8. Transfer to a bowl and top with pumpkin seed butter and drizzle coconut butter.

You can honestly use whatever ingredients you like.  Hemp seeds, almond butter, different fruits, nuts, etc.  To make AIP, replace the cacao powder with carob powder and eliminate the pumpkin seed butter and flaxseeds.
